Brazilian Cheese Bread (Pão de Queijo)

Ingredients:
- 2 cups tapioca flour our brazilian polvilho (also known as cassava flour)
- 1 cup grated Parmesan cheese
- 2 cups grated mozzarella cheese
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 tsp salt
- 2 eggs
Instructions:
- Preheat your oven to 350°F (175°C).
- In a saucepan, combine the milk, vegetable oil, and salt. Heat over medium until the mixture starts to simmer, then remove from heat.
- In a large bowl, combine the tapioca flour with the cheeses.
- Gradually add the hot milk mixture to the flour and cheese blend, mixing until smooth.
- Once the dough cools enough to handle, add the eggs and mix well until fully incorporated.
- Spoon the dough into a greased mini muffin tin or roll into small balls and place them on a baking sheet.
- Bake for 20-25 minutes or until golden and puffed.
