Brazilian Cheese Bread (Pão de Queijo)

Ingredients:

  • 2 cups tapioca flour our brazilian polvilho (also known as cassava flour)
  • 1 cup grated Parmesan cheese
  • 2 cups grated mozzarella cheese
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp salt
  • 2 eggs

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine the milk, vegetable oil, and salt. Heat over medium until the mixture starts to simmer, then remove from heat.
  3. In a large bowl, combine the tapioca flour with the cheeses.
  4. Gradually add the hot milk mixture to the flour and cheese blend, mixing until smooth.
  5. Once the dough cools enough to handle, add the eggs and mix well until fully incorporated.
  6. Spoon the dough into a greased mini muffin tin or roll into small balls and place them on a baking sheet.
  7. Bake for 20-25 minutes or until golden and puffed.
